Does anybody know who manufactures the Gigabit NIC on the G5? Is it Apple themselves or 3rd party?

Apple themselves. It's built into the system I/O controller. http://www.apple.com/powermac/architecture.html

The model is (according to Network Utility) a "gmac+".
