You'll need to download Handbrake

Instructions here. These instructions are a bit dated. The latest version of Handbrake comes with a preset especially for iPod format. Click the iPod preset and rip away.

I used to know how to do most of this stuff, but its probably been a year or two since I have actually converted some vids. I was wondering if anyone know of any walk-throughs for converting DVD/Vids so that they are compatiable with the video format on the iPhone. I searched the forum and google, but I couldn't turn up anything.

Also do you have any suggestion on decent video converters.

If you're converting AVI, Xvid, etc. . . . I would recommend that you try out VisualHub. It has a lot of presets, and is EXTREMELY fast. On My MacBook, it takes about 25 minutes to convert a one hour show. I don't believe VisualHub converts DVDs though. . . .

Handbrake rips and converts from DVDs.

If you select the iPod preset, it'll automatically scale your video to 640x___ resolution, which is the resolution on the current iTunes movies at the iTunes store.
