i have done a little searching on this subject but haven't had too much luck. have any of you done this? is it even possible?

You have to wait until some crazy japanese guts both a 867 and a 1 GHz PB and finds out which resistors to unsolder/solder. As for my personal opinion: don�t try to overclock a PB. The cooling of this things is really tricky. My 667 MHz Tibook has only one fan. If you compare the top notch model of this gen. (800 MHz) you�ll find that there are TWO fans and the heat pipe system differs completely from that of my machine. So overclocking would be definitely no good idea, since it would probably run incredibly hot....

most of the 12 in 867's run very hot to start with, so I would say it isn't really a good idea.

I want to overclock mine 12" 867 too!
I just installed the new 8xdvdr burner from Pioneer, works great, by the way. But I want to push my limits.

Anybody has a picture of the 12" 1ghz model motherboard with jumpers?

Jumpers? I'd be surprised if its done with jumpers. Remember, its not the end user they have to make it difficult for, its the Apple dealers. Otherwise there would be people who overclocked every Mac they sold in order to jack up the prices and therefore profit margins.
