Selecting a photo in iPhoto and going to Get Info will display the camera info for the shot: shutter speed, aperture, etc. However, a lot of information is missing: Brightness, iso speed, etc. In contrast, a demo version of Photo Mechanic that I have displays all the camera info of each photo.

Anyone know how can I get iPhoto to give me more information on each photo?

The Get Info window (NOT the little info pane below at the bottom left) has three tabs: Photo, Exposure, and Keywords. The Exposure tab has all the info you are looking for.
