How to Recover a Deleted App?

In an effort to stop it from crashing, I deleted a game app, expecting to reinstall it from the App Store. It turns out that the (paid) version no longer exists, so I got stuck with an ad-filled version when I downloaded it.
What I've found in researching looks like I should restore the WHOLE iPad, which sounds kind of excessive. Is there a way to restore only one app from a recent backup?

The paid version isn't stored in your (desktop) iTunes?

Exactly, iTunes stores backups of things by default.
That said, if the app isn't being supported anymore, that is likely why it's crashing.

The new Mac Pro has up to 30 MB of cache inside the processor itself. That's more than the HD in my first Mac. Somehow I'm still running out of space.

The paid version is in my backup, but I was hoping to find a way to restore JUST the one app, rather than the whole iPad. I haven't found anything like that. But at the same time, there's a new iOS update, so it looks like I'm going to be hooked up to the desktop anyway, so I guess I'll do the restore and then the update.
The whole app wasn't crashing, just a couple of new levels. No big deal, but since I didn't know about the change from paid to free/ad supported, I didn't know that there wouldn't be a paid version in the App Store... For what it's worth, the support folks at the game developer have been super helpful, within the limits of what they can do, of course.
I'll report back after I get the chance to restore the iPad and then update the iOS.

If you plug it into your computer, after the device shows up in iTunes, go to the device page.
Along the sidebar will be your "settings" choices. Go to "Apps", it's right under "Summary".
On that page is a list of all the apps you own. Next to each will be either an "Install" or "Remove" button depending upon whether the app is on your phone or not.
The app should be in the list. You hit the "Install" button, and then "Apply" at the bottom right.
Job's done.
