Why does this always happen?

The rule: If women are unobtainable, and provided a sufficient amount of time and alcohol, a group of men will eventually start to talk about sex. Perhaps alcohol shuts down the frontal cortex, devolving the higher critical functions upon the reptilian hind brain. I think it should be called Sweeny's Law after T. S. Eliot's lecherous Sweeney Agonistes. You are welcome to reformulate it more accurately if you deem it necessary.

Been inclined to wander... off the beaten track.

I don't see how the "unobtainable" part effects the conversation.

Nor the time or alcohol.

I feel like a better description would be "not available" or "not around."

Because we will be too busy trying to get women to talk about them.

A fair point.
If women are not present, and provided a sufficient amount of time and alcohol, a group of men will eventually start to talk about sex.
Or,
The probability that men will talk about sex is directly proportional to the amount of alcohol consumed, inversely proportional to the number of women present, and eventually approaches a certainty.
Obviously, Sweeny's Law is still a work in progress.

Do or do not. There is not "try".

Surely this excludes the fact that as soon as there's a bunch of women and no men, they all talk about our wieners?
I propose: People will talk about sex.

Are you sure that's what women talk about?

The first 13 words of your hypothesis are unnecessary.
There's also Chuck's Corollary, which states: "A group of women will eventually start to talk about sex."

Uh…I've known some very pleasant women who don't drink.
(Is that the sort of answer you were looking for?)

Better, but still needs more work to really cut to the bone.
I propose: “Sex”.
