how do i set up and configure logs for net services.. such as web sharing / file sharing / ftp etc...

It might be a quick, easy question, but the same cannot be said for the answer.

Each server has its own rules for how it performs logging.

In the case of Apache, the web server, /etc/httpd/httpd.conf contains various options for logging, including log format and location.

Other services, such as ftp, use syslog and you'll find a line in /etc/syslog.conf similar to:

ftp.* /var/log/ftp.log
which essentially tells syslog to log all ftp messages to /var/log/ftp.log

You'll need to investigate each other application in turn to determine whether it uses its own logging rules (like Apache) or syslog (like sendmail, ftp, etc.)
