They are found mostly around Pacific Coast of the US and Canada, and in Japan they seem to serve as inspiration for "manga" of certain tentacled variety





The average adult geoduck that you'll likely to meet will be the same age as you - 25 to 50 years old, but it hardly has the same experiences as you are, being buried all its life in one spot.

Mike Rowe dug these up on an episode of Dirty Jobs. It was pretty funny. Apparently they're seen as an aphrodisiac because of...well...I'll let you guess that one. And it's pronounced "gooey-duck."

Tastes great. You find it at Asian restaurants, very thinly sliced. However, I almost never have it, because it's so damn expensive.

You may need 2 lbs of it for a dish, but the restaurant may charge you something like $35/lb. ie. $60-70 for a single dish (IIRC), while a beef dish on the menu may cost $8.99.

I saw it on dirty jobs also and it is pretty gross. Even though they live over 100 years the ones you eat are only a few years old.

Apparently, it still can be purchased for way less than $30-35/lb (in a restaurant), even though I paid $25/lb 10 years ago.

I did a quick Google search of "geoduck farming" and was surprised at the results. Quite a bit of commotion is being caused by geoduck farming. Apparently it ruins the use and aesthetics beaches and endangers some other wild life. There's always trade offs for farming, and I'm sure I don't fully know the argument, but it seems like this kid of farming could be done differently.

My brother works for one of the 2 major companies in the area (Puget Sound) and it sounds like rough work. He has to work according to the tides (obviously) so his schedule is constantly changing.

I've had it. As posted above, geoduck tends to be served thinly sliced, and I've found that the meat has a soft part and a harder (chewy) part. It may be served blanched, stir fried, or even raw with a spritz of lemon/citrus (acid) and light garnishes. Even when blanched or stir fried, you don't cook it for long or you'll overcook the meat. And most Asian preparations of the dish tend to be very light with the seasoning (nothing much more than soy or ponzu sauce, with scallions, ginger and maybe some chili peppers). The meat has a very delicate, but very nice taste and you shouldn't spoil it with excessive seasoning. Good stuff.

Yeah, it kind of reminds me of a cross between clam (go figure) and squid, and like those it can be only very lightly cooked or else it will turn rubbery.

I hate rubbery seafood, which is why I never go to places like Red Lobster.

I always find clams and squid not to have much taste on its own so the seasoning is what sells me.

I think squid taste great lightly fried or grilled with just a bit of salt or balsamic vinegar and garlic.
