I've installed Office 2011 Home and Student in my iMac (OS 10.6.6; 2.8 GHz). Can I just drag all 0f 2008 (except Entourage) to the Trash and be done with it? Thanks!

I'd recommend using AppCleaner (free) to get rid of the random crap programs leave scattered around your HDD.

Why delete it, unless you're out of room? Each version has some features that the other doesn't. You may want to keep both.

I had issues with '08 Office apps opening despite setting it to use '11 versions, so I deleted Word, Excel, and PPT '08. The OP may be having the same issues.
