I'm having problems with Mail.app. I'm trying to set a default email address for several of my contacts and, despite googling the topic and finding some ways of doing it, I can't seem to get it to work. It's very irritating, as most people I know have at least two email addresses now, and I'd like to be able to choose a default on a case-by-case basis. Anyone able to tell me how to do this?

Also, another question: I'd like to override a sender's name, and display it as it is in my Address Book. Is this even possible? And if so, how do I go about doing it?
