When I load iChat and then minimize a chat window, I normally get this on the dock:

But when I quit iChat and then load it again, I get this when I minimize the same window to the dock:

How do I KEEP it with the transparent background?

The second icon is the icon that you get when you are chatting with an AIM user without a profile pic. My guess is that iChat is just confused. Maybe try repairing your HD's disk permissions in Disk Utility.
