What do I need to upgrade Ram?

I have 1 gig of ram in my MBP and I want to have 2 gigs. Do I need to replace the first gig with a new kind to match the other? Or can I keep the apple brand and add another.

You can keep and add. Remember, the 'Apple' RAM is also actually from some third party (e.g. Nanya or Micron).
