Are the processors in the xserve replacable like the macpro's? Thinking of grabbing one of the refurbs and replacing the quad to an octo later when the chip prices drop. Seems like it should but want to be sure before I do this. tnks

Yes.

They don't make Xeons in a solderable package, so there all socketed.
