I haven't tried it, but TubeSock sounds pretty cool

It's really easy in Safari actually. Wait for the movie to load completely, and go the activity monitor in Safari, and find the flash file. Save that to your hard drive, and there's a tool out there (freeware) that will convert it to a movie file. I'm not at home right now, but when I get home, I can find the name of it for you.
