Great feature, Apple! Nicely done, and nicely implemented!
I don't know if there is a source for extensions other than Apple's gallery (and their own gallery page seems like it is a stopgap until they get enough extensions that would warrant changing the interface/layout of the page?), but from Apple's gallery I've been enjoying:
- AdBlock
- Validator
- BetterSource
I'm thinking I will enjoy LastPass too, although I haven't used it yet. MeasureIt will get some light usage too.
It seems like it would benefit these extension makers and Safari itself if there was some way of notifying the user of updates to these extensions short of going to the Extensions app preference tab. I'm not so sure I want to install updates automatically, I generally prefer to try the updates when I have the time to test them, I don't want one potentially randomly cause problems when I'm working.

I don't use any other extensions since I consider them a security risk and I haven't seen one with a significant benefit yet.

My faves:
ClickToFlash - prefer to use an extension over a SIMBL plugin
SafariRestore - Restores all open tabs if I quit Safari (or if it crashes)
Ultimate Status Bar - Like it much better than having a permanent status bar (it adds a Google Chrome-like bar that appears on mouseover).
Javascript Blacklist - disables crap like that annoying ass title bar MacNN has on their homepage
