Hi... is it possible to convert the HDMI on the ATV by...

HDMI>DVI adapter

Apple DVI Video adapter which gives composite and S-video!

Would that work??

Pretty sure that wouldn't work. The DVI to composite adapter doesn't do a signal conversion; it needs an analog signal to be supported in the video port and it then separates out that signal. As far a I know, the AppleTV hdmi port doesn't carry an analog signal.
