HD Upgrading help/advice requested

Need help thinking through the best way to upgrade HDs in my Mac Pro
Current set up:
• all 4 drive bays are occupied
• drive 1 is the boot drive and has applications on it (500GB)
• drives 2 and 3 are a stripped RAID array and is a data drive. (1TB total) it contains my:
o iTunes library which is quite large as it holds a lot of movies and TV shows
o Pictures
o Video from HD camcorder
• Drive 4 is backup drive running time machine (1.5TB)
Problem:
• My RAID is continually filling up and I’m having to offload things onto an external drive to keep it going.
What I’d like to do:
• Replace the drives in drive 2 and 3 with 1.5 or 2 TB drives in a non-RAID array so that I have a lot more data on which to store things. (I take a lot of pics and HD video and don’t want to have to do this again for a long time.)
What I’m concerned about:
• Losing the all the links to the data (especially in iTunes) when I transfer the data from the RAID to the new drives. (i've moved my iTunes library in the past and I've lost link and playlists)
What is the best way to accomplish what I want to do with minimal hassle afterward?
Please ask questions if I haven’t been clear about what I want to do.

Buy an external enclosure or dock.
Copy everything from the RAID to one 2TB drive using the external.
Replace the RAID set with two 2TB drives.
Rename the 2TB drive you copied everything to have the same name the RAID volume did.
