Now when I send emails from my iPhone the email app defaults the sending email to the iCloud email address Apple is forcing on me. The default is set to 'me.com' in the settings. Without manually changing each email how do I get iOS to use the default I want - the me.com address? I really do not want another email address.

In mail preferences, my iCloud account allows me to switch on permitted "sent from" aliases.

I just switched off all "@icloud.com" aliases; done.
