I am taking an old iMac to the recycle/dump drop off. It will not start, at least the screen stays dark so am not sure what steps I need to take to get rid of my info before I discard it.

If you have another mac, you could connect the two machines with a firewire cable and try booting the iMac in target disk mode (power it up holding down T). If it boots OK, the iMac hard drive should mount on your other mac from where you can use disk utility to perform a thorough erase. It may not work of course as the iMac may be properly dead.
Alternatively, you could remove the hard drive as if you were going to swap it and either dismatle it or damage it physically - but please be careful - we don't want any injuries.

I'd go for removing the hard drive and smashing it to smithereens myself. A great way to get rid of some aggression

Remove the hard drive yes, but you could actually just keep it and get an external hard drive kit for it, rather than smashing it up and wasting a perfectly serviceable hard drive.
