Change title in incoming MAC mail

Hve not been able to see in Mac Mail how a title of an incoming mail can be changed?
This functions works on Microsoft programms and I guess there is certainly a function on Mac Mail also.

Incoming mail is not editable because... why would you edit it?

This function helps to save answers in a different folder under your specific subject that you can easily find it at a later stage.
E.G. If someone sends you an email with some good information about like: how to use the built-in dictionary for a second language, but the title reads 1234 and you want this the read Dictonary, 2nd language.

forward it to yourself wth a new topic - otherwise, i'd just say that this is what the whole "search" feature is for....

You are the second person in this universe who mentioned this. The first was a client of mine who insisted on doing this, for the same reason that you did (classifying/cataloging e-mails). No amount of convincing on my part could get her to change her mind, so she's stuck with using Eudora.
Personally, I think any e-mail software that allows this isn't worth using, but you could try Eudora.

You can also apply color labels to your mail just like in the Finder. Use Format -> Colors.
