I have just found a hidden feature in Mail.

Create a new email and select one of the following included stationary documents - Bamboo or Daisies.

You will see that they have a coloured background of Bamboo or Daisies.
If you don't like the colour you are given just left click on the background and it will change to another colour. Keep clicking and you will cycle through a range of colours for each background.

This only appears to work on the two templates above which is a pity as it would be nice to have a Pink Baby template!
