What would the speed difference be between a single processor 1.25 Power Mac and my eMac 800 w/ Superdrive. I have been offered $850 for my eMac. Is this worth it? Can I upgrade it to a dual later?

You can't officially. I think there are third party options though.
I don't think the difference will be that great. Do you find your eMac slow? If not, keep it.

I am using it to encode mpeg2s, and I do find it sluggish for that., and dual displays would be nice.

Well, it's $800 for a 1GHz eMac w/ Combo Drive, 40GB HD, 128 MB RAM, and it's $1100 for a 1GHz eMac w/ SuperDrive, 80 GB HD, 256 MB RAM. Depending on where yours fits in between these, $850 sounds reasonable. The SuperDrive is definitely a bonus, though, so maybe you could get $900. Check eBay.

I'd consider it a substantial upgrade. 425 MHz more raw clock speed, faster system bus, L3 cache... it should definitely feel a lot faster! If it won't cost you too much more, go for it.
