I've been trying to get an old UMAX Astra MX3 (USB) to work with OSX 10.3.1 using the TWAIN SANE drivers. No success so far. Has anyone made this work? could you post a config file if you have?

Either use VueScan, or VistaScan in Classic.

Vuescan doesn't do USB and Vistascan doesn't work in Classic!

I've just been trying to get my UMAX 3400 working with this software too and I can't figure it out

You're wrong on both counts, as VueScan most decidedly supports USB (I've done it) and VistaScan most decidedly works in Classic (I do it all the time).

I have an Astra 3450 (3400 with transparency) and I've used it with the VueScan demo, but VistaScan works just fine in Classic, that's how I use my scanner!
