Today, after upgrading to Leopard and then 10.5.1, my email server refuses to let me delete mail. It fails with an error that says "UID COPY unable to copy to Trash". Any ideas on what might be wrong?

Sounds like you are using a trash mailbox stored on the server that either can't be found, or perhaps is corrupt. What is the name of your trash mailbox, and does it exist as an Inbox folder?

Could be your email client. Try rebuilding your mailboxes.
