Dual 1.8 GHz G5s means it's either a rev A or B (2003-2004) Power Mac. They came with regular PCI on the low-end and PCI-X on the high-end. Note that PCI-X is not the same thing as PCI Express. PCI Express wasn't introduced until Rev D (late 2005).

Thankyou for your help. So will a PCI card work in a PCI-X slot?

how can I tell if it's a PCI or PCI-X? any distinct differences?

The PCI boards have 4 RAM slots. The PCI-X boards have 8 RAM slots.

In most cases, PCI cards will work in PCI-X slots. Some older PCI cards that require 5v will not work.

The reason I was asking this is because I was thinking of getting the M-Audio Revolution 5.1 sound ccard (for connecting surround sound speakers to my mac)

but I just realised the G5 has a digital audio out

does this mean I can connect the digital audio out straight into home theatre surround system? (without the need of a surround sound pci card?)
