Is it just me, or does it seem that every company that boasts 'served on a mac' is a lot more expensive with less features? Here's an example:

www.macdock.com compared with www.insiderhosting.com
-or-
www.xrackhosting.com compared with www.icdsoft.com

Just wondering.

Yes that is true, but Mac's have advantages over those PC linux boxes.

I host www.macwrite.com with www.jmug-connect.net and I love it. No more FTP just mount the AFP and upload.

I am going to be hosting all my new Mac sites I am working on with them, along with client sites I have to maintain.

I agree, but for someone like me who wants to have a portfolio online, which would be the most convenient in terms of cost?

If you just want a portfolio online, why do you want a Mac-based host? Pretty much any Unix-based server would do, especially if you use Apache locally on your Mac. FWIW, I highly recommend http://www.pair.com (not affiliated with them other than being a very satisfied customer).

Oh I know, I was just wanting to support the mac platform. Regardless, I have chosen a hosting company but I was just trying to figure out the reasons as to why Mac hosting was much more expensive with less features.
