Heirarchy menu in OS X is funky

Since I've loaded Jaquar and now running Panther, my heirarchy menus always are at the end of the destination so I always have to 'back out' to find the folder I want. How can I set OS X to default to the first position of the heirarchy rather than the last. It's really a time consumer. Can I tell it which folder to start from? And where do I do this?
Also, on another note, does anyone know why connected file servers aliases do not remain intact in Jaquar? My dock alias is always 'looking' for the file server - and I have to go in to 'Connect to Server' everytime I want to connect - then the alias finally works. (This is probably worth another post as a seperate subject)
