This occured to me watching the keynote last week.

Say I'm using Mail writing a message to my friend. I want to include an address that I don't know, so I activate Dashboard and use the yellow pages widget to find it. Is there any way I'll be able to keep the widget visible when I switch back to Mail so I can copy the infromation? Or can you copy and paste from Dashboard widgets like any other app?

Dashboard widgets are just WebKit views, so there ought to be copy/paste functionality built-in. Also, at least in the early dev builds of Tiger I understand you can start dragging a widget and then hit F9 (or F12 or whichever it is) to dismiss Dashboard, and the widget you're dragging will stay on screen. I think you can drag it back into the Dashboard layer again too.

Copy/Paste to and from widgets work. As of build 294, the drag and hold then dismiss Dashboard-layer also work and the widget will stay floating over your apps. I didn't know that, and it's even cooler now that I do
